2020 Miss SAKEの松井詩です。
現在、日本酒造組合中央会様の【鍋＆SAKE】プロモーションビデオに出演させていただいております。こちらでは「鍋と日本酒がおいしくなる」をテーマに、おいしい鍋とレシピ、それぞれの鍋に合う日本酒や、日本酒の飲み方を紹介しております。
『家飲み編』2品目でご紹介させていただいたのは、九州や関西が発祥の起源ともいわれる「鶏手羽元の水炊き鍋」です。いろいろな調理法がありますが、鍋に水を張って、具材を煮込んで、ポン酢醤油に付けて食べる。
シンプルで作るのも簡単ですが、とっても美味しいお鍋の定番ですよね。
撮影では、こばたてるみ先生ご指導のもと実際に調理を行いましたが、コラーゲンたっぷりの鶏手羽元はパリッと焼き色を付けてからお鍋に加えることで、コクが深まるそう！ちょっとした工夫で格段にお鍋が美味しくなるポイントも教えていただき、大変勉強になりました。
一口口に含むと、シンプルな味付けにより一層引き出される、鶏のお出汁が体に染み渡ります。
お手軽にコラーゲンも栄養もたくさん取れて、心も体も温まりました。
『鶏手羽元の水炊き鍋』には甘さと酸味の調和のとれた、爽やかな飲み口のお酒がお勧めです。
こちらの動画では、日本酒の味わいを４つのタイプに分類しお話をさせていただきました。

[For English Speakers]Hello, everyone. This is Shihori Matsui, 2020 Miss SAKE Japan.
It is my greatest pleasure to make an announcement that I am appearing on a YouTube video “Nabe & SAKE” created by Japan Sake and Shochu Makers Association. To promote the mouthwatering combination of Nabe (a variety of Japanese hot pot dishes) and Sake, in the following video I’ve explained the delicious Nabe recipe, marriage with Sake, etc.
The second recipe is a Mizutaki Nabe. Mizutaki is a Japanese Chicken Hot Pot in which chicken, assorted vegetables, mushrooms, and tofu are cooked in a light kombu dashi broth. Dip the freshly cooked ingredients in the savory and citrusy ponzu sauce. It’s one of the best wintery foods to enjoy. Mizutaki has been eaten mainly in the Kyushu and Kansai (Osaka) regions, but each region has its version with different cooking methods.
I highly recommend the combination with a Sake that delivers a fruity aroma. The recipe is filled with ideas that strongly elevate the taste of the Nabe.
