Introducing Japanese Sake at a Private Dinner Party —Miss SAKE Japan 2025 Chisato Tateno

Hello everyone, this is Chisato Tateno, 2025 Miss SAKE Japan.
Recently, I had the opportunity to introduce and serve a selection of special Japanese sake at a private dinner party held at ENEKO Tokyo in Minato-ku, Tokyo.
I participated in the event together with Mr. SAKE 2024 Grand Prix Kenji Ueyama and Miss SAKE 2025 Runner-up Kana Hazuma.


Sake that Enriched a Special Evening

During the dinner seminar, I first spoke about the mission and activities of Miss SAKE, followed by an introduction of the six varieties of sake to be enjoyed that evening. From award-winning bottles and rarely available favorites to the increasingly celebrated “assemblage” style of sake, the diverse lineup offered a unique tasting journey to enhance this special night.

The pairing with ENEKO Tokyo’s innovative interpretation of traditional Basque cuisine added further depth to the tasting experience, creating moments that resonated warmly with guests.
It was truly a joy to share a space where sake and cuisine complemented one another, naturally sparking conversation, smiles, and a sense of togetherness.

The selection of sake and food pairings served during the event were as follows:

  1. Shichiken Sparkling Sake “Hoshi no Kagayaki” — Yamanashi Meijo (Yamanashi)
    with Three Canapés (Caipirinha / Eel Brioche / Mushroom Praline)
    Fine, star-like bubbles with elegant umami and notes of pink grapefruit, marshmallow, and cotton candy from bottle-fermentation.
  2. Hokusetsu Junmai Daiginjo NOBU — Hokusetsu Shuzo (Niigata)
    with Scallop Granizado
    Crafted for the world-renowned restaurant “NOBU.” Polished to less than 45%, offering delicate, fruity elegance.
  3. IWA 5 Assemblage 6 — Shiraiwa (Toyama)
    with Fried Fish and Parsley Emulsion
    Created by Richard Geoffroy, former Chef de Cave of Dom Pérignon. Complex layers of pear, plum, seaweed, and cacao, with a graceful harmony.
  4. Shichiken Junmai Daiginjo “Hakushin” — Yamanashi Meijo (Yamanashi)
    with Wagyu, Duxelles & Pil Pil Sauce
    Polished to 27% and aged for one year. Deep, lingering umami. Label artwork by Yamanashi-based dyer Ena Furuya.
  5. Tokubetsu Junmai Ginpu Dry — Kamikawa Taisetsu Shuzo (Hokkaido)
    with Clam Risotto
    Limited to 300 bottles. Clean, fresh, and lightly aromatic with a gentle finish.
  6. Kasumi — Assemblage Club (Kyoto)
    with Strawberry Compote / Strawberry Chiffon Cake / Yogurt Ice Cream
    A cross-brewery assemblage by three Kyoto breweries. Light, sweet-tart, and beautifully fragrant with Japanese citrus notes.

Encounters Connected Through Sake

After the presentation, we enjoyed speaking with many guests at the sake booth while sharing the unique character and stories behind each brewery.

Among the selection, Shichiken Junmai Daiginjo “Hakushin”, winner of the Champion Sake at IWC 2025, drew particular attention. Those who enjoy wine were drawn to the fruit-forward depth of IWA 5, while guests seeking versatile food pairings appreciated Hokusetsu NOBU, and those who enjoy refreshing citrus aromas favored Kasumi Kanzumi. As I am from Hokkaido, it was especially meaningful that Kamikawa Taisetsu Tokubetsu Junmai Ginpu Dry was warmly received for its fresh apple-like aroma and smooth finish.

It brought me great joy to see both those new to sake and long-time enthusiasts discover a “personal one cup.”  Many shared comments such as, “This was my first time realizing how deep sake can be,” and “I’ve never enjoyed sake this much before.”  Hearing these words reaffirmed for me the vast diversity and potential of sake.


Through this party, I was reminded once again that sake has the power to connect people and open hearts.  The conversations, smiles, and moments we shared were truly ichigo ichie — unique and unrepeatable.

As Miss SAKE Japan 2025, I will continue to share the culture, craftsmanship, and passion that each brewery pours into their sake, and help more people discover “the one cup that speaks to them.”
I will continue to act with sincerity and gratitude, serving as a bridge between sake and the world.
