5月上旬、鳥取県にございます約20近くの酒蔵様のうち以下酒蔵様、および協賛企業様（一部）に訪問させていただきました。

鳥取県には、「食のみやこ鳥取」のキャッチフレーズがございます通り、海にも山にも恵まれ、多様な農水産物と酒造りがございます。

西日本最大級のブナ林が広がる大山をはじめとする中国山地の雪解け水が、長い年月をかけて地中でろ過され、豊富な伏流水となります。大手飲料水メーカーの取水地にもなっている程、ミネラルバランスに優れた清らかで豊富な軟水の名水が数多くあり、これらの水から、口当たりのまろやかな鳥取の地酒が生まれています。

 

純米酒は、米、水、麹のみを原料とした濃厚な味わいの清酒ですが、鳥取県の日本酒の特徴の一つとして、全国と比較して純米酒の比率が高く1/3を占めており、「純米酒王国」となっていることがあげられます。

鳥取県では、酒造りに適した米として玉栄、五百万石、強力、山田錦などを生産しています。特に、「強力」は背丈が高く、その栽培の難しさから一度栽培されなくなってしまいましたが、県内の方々の熱意と努力で復活した幻の酒米と呼ばれています。現在県内でのみ生産が許可されており、鳥取県の固有米となっています。

 

複数の酒蔵様が共同で鳥取県から海外へ日本酒を輸出するプロジェクトを数年前から開始されていると伺いましたので、今回各酒蔵様から伺った想いをのせて、

現在進行されていらっしゃるインドを始め、他国への展開に私もMiss SAKEとして貢献していきたいと思います。

2024 Miss SAKE Tottori, Yuka Hayashibara visited sake breweries in Tottori and companies sponsoring the Miss SAKE Tottori competition

 

Hi, everyone. I’m Yuka Hayashibara 2024 Miss SAKE Tottori.

In early May, I had the pleasure of visiting the following sake breweries, which are among the approximately 20 breweries in Tottori Prefecture, as well as some of the sponsoring companies of the 2024 Miss SAKE Tottori competition.

As the catchphrase “Shoku no Miyako Tottori (Food Capital Tottori)” suggests, Tottori Prefecture is blessed with both the sea and mountains, offering a diverse range of agricultural and marine products, as well as sake brewing.

The abundant meltwater from the Chugoku Mountains, including Mount Daisen, which boasts the largest beech forest in western Japan, is naturally filtered underground over many years to become plentiful subterranean water. This mineral-rich, pure, and soft water is highly regarded, even serving as a water source for major beverage manufacturers. From this water, the smooth and mellow local sake of Tottori is born.

Junmai sake, which is a rich-flavored sake made only from rice, water, and koji, is a significant feature of Tottori Prefecture’s sake. Compared to the rest of the country, Tottori has a high ratio of junmai sake, accounting for one-third of its production, earning it the nickname “純米酒王国Jyunmai shu okoku (Junmai Sake Kingdom).”

In Tottori Prefecture, rice varieties suitable for sake brewing, such as Tamasakae, Gohyakumangoku, Gouriki, and Yamada Nishiki, are produced. Particularly notable is “Gouriki,” a tall rice variety that was once discontinued due to cultivation difficulties for its height. However, thanks to the passion and efforts of the people in the prefecture, it has been revived and is now called the “Legendary sake rice”. Currently, its production is only permitted within the prefecture, making it a unique Tottori rice.

I heard that several sake breweries in Tottori have been collaborating on a project to export Japanese sake overseas for several years. Inspired by the thoughts and aspirations shared by each brewery, I hope to contribute to the ongoing expansion to India and other countries as Miss SAKE.

I would like to extend my sincere gratitude to Sawatoshi Transportation, the brand partner of Miss SAKE Tottori, and everyone who took the time out of their busy schedules to meet and guide me through the sake breweries. I will continue to commit to promoting its charm and increasing the number of Tottori and Japanese fans both domestically and internationally through Japanese sake.
